Ingredients
  

  • tbsp  olive oil
  • large  yellow or red onion, diced
  • tbsp  fresh garlic cloves, minced
  • cup  crushed or chopped tomatoes
  • tsp  curry powder(optional)
  • cups  cabbage, chopped finely
  • cup  grated carrots
  • salt and pepper to taste

Instructions
 

  • Heat a large pan on medium heat.
  • Add olive oil and onions and cook until soft before adding garlic and curry powder. 
  • Cook for 1 extra minute.
  • Add cabbage, carrot and fresh black pepper on top and let steam for 1 minute and then mix well.
  • Cook until desired tenderness is achieved. (About 10 minutes)
  • Remove from heat and set aside until ready to serve.
