- 2 tbsp olive oil
- 1 large yellow onion, diced
- 2 cloves fresh garlic cloves, minced
- 1 tsp jalapeno pepper, diced
- 4 cups fresh-Kale, chopped
Heat a large pan on medium heat.
Add olive oil and onions and cook until soft before adding garlic and jalapeno pepper.
Cook for 1 extra minute after adding garlic.
Add the chopped greens and let steam for 1 minute and then mix well.
Turn off heat and let cook until ready to serve.
The cooking time required is short and it stores well in the refrigerator for at least four days.
Make a large batch by doubling or tripling the recipe so that it is readily available to use if you want to add it to other dishes.
